    There’s common confusion here. Let me set it right: There is no immediate cut off line between grilled cheese and melt.

    A grilled cheese, for at least the purposes of this sub, is bread, spread, and cheese. If the onion and jalapeño were in the cheese, then it’s still a grilled cheese.

    Even though the onion and jalapeño were added in this case, it doesn’t automatically make it a melt. It’s just a delicious toasty sandwich. Toasted sandwiches are great! It’s just not a grilled cheese.

    As far as I’m concerned, this is a grilled cheese. I think this can be recognized as a grilled cheese in the same way pepper jack grilled cheeses are, but with elevation (that being the amount of seasoning and size of the pepper). That being said, adding other things to your cheese such as meats, crosses the line into the melts.

    That is one solid looking grilled cheese.
